Superfood Bliss Balls

These bliss balls are not only packed with fibre, healthy fats and antioxidants, they are the perfect afternoon treat and also kid approved!

Ingredients

1 cup Cashews, raw or 1 cup almond meal

¼ cup Cacao beans

¼ Cup Cacao powder

¼ cup Goji berries

½ Cup Coconut, dessicated

2 Tbsp Chia seeds

4 Tbsp Protein powder

1 Tbsp Spirulina (optional)

2 Tbsp Rice syrup

2 Tbsps Coconut Yoghurt or Coconut Oil

1 Tbsp Water

Coating (optional):

¼ Cup Goji berries

¼ Cup Cacao nibs or Shredded Coconut

Method:

  • Place cashews in the food processor and grind down to a fine powder. If using almond meal no need to blend.

  • Add the goji berries and cacao beans and blend.

  • Add all other remaining ingredients except the water and coconut oil/yoghurt.

  • Once mixture is well incorporated add the cacao butter and enough water to help bind everything together.

  • To make coating grind goji berries and cacao nibs or shredded coconut.

  • Roll into balls and coat with the goji and cacao nib mixture.

  • Place in the fridge until they are firm approx.. 2 hours.
